Would unironically love this. The ergonomics of using a decent controller are so much more comfortable to me than traditional driving controls. Just being able to rest the controller down on my lap and control the whole vehicle with thumbs and fingers is far less fatiguing for me than holding my hands up to a wheel and working pedals with my feet for longer journeys.

Since it's just data on a bus, you could plug in a video game controller and use that instead.
